What You'll Need:
- Chemex coffee brewer
- Chemex coffee filters
- Freshly roasted coffee beans
- (Preferable) Burr grinder
- Gooseneck Kettle (or Boiling Water)
- Digital scale
- Spoon or stirrer (optional)
Step 1: Heat Water
Start by heating your water to about 200°F. A gooseneck kettle is recommended as it allows for more control while pouring the water. You can either boil water and let it cool to the desired temperature, or use an electric kettle with temperature control.
Step 2: Grind Coffee
While the water is heating, grind your coffee beans to a medium-course consistency. Use a burr grinder for the most consistent grind. If you’re using the Baratza Encore, it’s recommended to grind on setting #20 for Chemex.
Step 3: Rinse Filter
Place the Chemex filter in the coffee maker with 3 flaps on one side and one flap on the other and rinse it with hot water. This helps to remove any paper taste and preheats the Chemex.
Step 4: Add Coffee and Water
Begin with a 18:1 ratio of water to coffee and pour in a circular motion to ensure even extraction. Add your ground coffee to the filter and make a small well in the center. Pour 50-100g of water to completely saturate the grounds and allow it to “bloom” for about 30 seconds. Pour the rest of the water slowly over the coffee in small, concentric circles about 100g of water every 30 seconds until all of the water has been poured. The ideal brewing time is 4-5 minutes.
